Chickpea Cookie Dough Bites Recipe

Indulge in these whole-grain dessert bites that are both delicious and good for you. Created by vegetable-loving food writer and expert Ananda Eidelstein, this recipe brings the surprising delight of chickpeas transformed into dessert. Despite the presence of chickpeas, their taste is masked by the rich flavors of pecans, cinnamon, and molasses, making these bites taste like oatmeal raisin cookie dough.

Here’s what you’ll need:
– 1 ½ cups old-fashioned rolled oats
– ½ cup pecan halves
– 1 can (15 1/2 oz.) chickpeas, drained and rinsed
– ½ cup raisins
– ⅓ cup molasses
– ¾ teaspoon ground cinnamon
– ¼ teaspoon kosher salt

To prepare, pulse the oats and pecans in a food processor until finely ground. Add the chickpeas, raisins, molasses, cinnamon, and salt, and process until smooth. Roll the mixture into 22 balls, about 1½ tablespoons each, and refrigerate until firm. Enjoy these satisfying and nutritious treats within a week and relish their secret chickpea goodness without any guilt.
