This simple recipe involves melting butter and mixing it with miso paste, rice vinegar, and garlic to create an umami-rich coating for crisp-tender green beans. Begin by boiling a pot of salted water. Add the trimmed green beans and cook them until they’re bright green and crisp-tender, about 3 to 4 minutes. Once cooked, drain the beans and cool them under running cold water.
In a large skillet over medium heat, melt a tablespoon of butter, then add panko, garlic powder, and salt. Stir frequently until the panko is toasted, about 4 to 5 minutes. Remove from the skillet and set aside.
Using the same skillet, melt the remaining butter, and mix in the miso, vinegar, and chopped garlic. Cook for about 30 seconds until fragrant. Add the cooked green beans, tossing to coat them evenly in the miso mixture. Cook for 2 to 3 minutes.
