The side dish is Charlie Bird’s Farro Salad, originating from the NYC restaurant Charlie Bird. Garten describes it as earthy and sweet due to the farro cooked in apple cider, with a citrusy lemon vinaigrette, peppery arugula, and salty, crunchy pistachios.
According to the Barefoot Contessa, this salad goes well with lamb, chicken, and fish. To prepare, farro is first cooked in apple cider with bay leaves, salt, and pepper. Lemon vinegar is then added while the farro remains warm. For the full experience, Garten suggests mixing olive oil, lemon juice, salt, and pepper into the cooked farro and allowing it to cool.
Just before serving, roast pistachios, parsley, mint, tomatoes, radishes, arugula, and shredded Parmesan are combined, with a finishing touch of sea salt. This side dish offers a perfect blend of flavors and textures, making it a standout addition to any meal.
