Fill your garden with these vegetables that thrive in drier climates. Fresh vegetables from the garden are delightful, but maintaining them can be challenging, especially in dry climates. Fortunately, some vegetables are hardy enough to grow with minimal watering, recommended by garden experts.

Zucchini, for instance, only requires consistent watering initially. Once established, it thrives on the retained moisture from its deep roots, explains Sara Abbass from Sara Mairead Landscape Design.

While bell peppers adapt to tough conditions, hot peppers are especially suited for dry environments, says Abbass. These plants are hardy, allowing them to thrive despite challenging conditions. Initially, regular watering is crucial, or you can opt for a mature plant from a local store.

Many beans are drought-resistant, including pole beans. They are easy to plant, with deep roots that reach moisture far below the surface.

Kale doesn’t need frequent watering, but when watered, it should permeate the soil deeply. It requires about an inch or two of water per week, whether from rain or manual watering.

Swiss chard is a robust plant that endures varied conditions. It can handle heat well and improves with regular harvests. Grouping plants with similar water requirements can make irrigation more efficient.

Roma tomatoes adapt easily to drought conditions and are perfect for canning or making sauces when ripe at summer’s end.

Eggplants, with the right variety, offer a substantial yield in dry conditions. They require at least an inch of rain weekly. If rain is scarce, soak them thoroughly at least once a week.

Okra is another dry-tolerant crop, requiring occasional deep watering, especially during extended heat. Managing weeds is crucial to ensure plants retain their needed water and nutrients.
