This easy French-style baked fruit custard, traditionally called clafoutis, is a wonderful way to feature strawberries. Although it typically uses cherries, this version uses jammy strawberries to create a subtly sweet and eggy custard.
To prepare, ensure your blender quickly mixes the ingredients to avoid a rubbery texture. The clafoutis should puff up in the oven and then sink as it cools, signaling it’s perfectly baked. Enjoy it warm with vanilla ice cream or at room temperature with whipped cream.
Ingredients:
– 1 lb. fresh strawberries, hulled and halved (about 3 cups)
– 3 large eggs
– 3/4 cup whole milk
– 1/2 cup heavy cream
– 1/2 cup all-purpose flour
– 1/2 cup blanched almond flour
– 1/2 cup granulated sugar
– 3 Tbsp melted unsalted butter, plus more for greasing
– 2 tsp pure vanilla extract
– 1 tsp lemon zest
– 1/4 tsp fine sea salt
– Confectioners’ sugar for dusting
Instructions:
1. Preheat your oven to 400°F and butter a baking dish. Scatter the strawberries in it.
2. Blend the eggs, milk, cream, flours, sugar, butter, vanilla, lemon zest, and salt in a blender. Pour over the strawberries.
3. Bake for 10 minutes, then lower the heat to 350°F and continue baking for 25 to 30 minutes until browned and set.
4. Cool on a wire rack for 20 minutes before serving. Enjoy with a light sprinkle of confectioners’ sugar.
You can store leftovers in the fridge for up to four days and reheat in a low oven. This dessert is a delightful treat that brings a touch of French elegance to your table.
